I first saw Induction hobs at the Rand Show a year ago , I have used my induction stove as a portable device in the kitchen to cook my eggs and boil coffee water. We have recently used our induction stove for making puttu-pap in the lapa. I know some people also use for camping. Although we are new to induction cooking, I have changed many a habit and would like to tell you that this induction cooker was one of the best investments this past year.

Induction hobs , are ideal for the kitchen. Many people use this induction stove for camping. Some people boil their eggs and coffee water with this induction hob. Induction cooking is certainly fast becoming main stream in Eastern countries. Some people buy one induction cooker for camping due to the flexibility and weight advantage as well as the huge energy saving benefits these Induction cookers offer.

Induction hobs is a new technology in South Africa but the first patents have already been lodged early in the twentieth century. Conventional cooking equipment such as resistance heating stoves, gas stoves and microwave ovens are well known to the consumer but the advantages of the induction hob far outweighs those of the others and therfore makes a good alternative for any kitchen.

Induction elements use a solid-state power supply to convert 60 Hz alternating house current into a high-frequency alternating current. This high-frequency current  passes through the glass-ceramic plate of the cooktop and heats up the ferromagnetic containing base of a cooking vessel. Heating of the base is instant and the level of heating is controlled by a sensor underneath the glass-ceramic plate. The glass-ceramic plate is unaffected by the magnetic field and remains relatively cool thus preventing any accidental burns.

With an induction cooktop (1.8 kW), one liter of water will boil in approximately three minutes compared to approximately 7 minutes on a gas stove. This is brought about by the very efficient transfer of energy and with very little loss. Hence, induction cooking is 84% efficient, compared to gas (45%) and normal electric (65%).

Except for the energy saving advantages, the cooktop is easy to clean due to the relatively cool flat surface. Due to the relative cool surface, burns to hands are limited. The cooking area also remains cool and comfortable.

Through the years, professional chefs have also seen and acknowledged the advantages of induction cooking. Due to the electronic control of the cooking process, recipes are easily reproducible. As no open flames are used, kitchens are cooler and less has to be spent on airconditioning for the cooling of kitchens. Cooking is also much faster on induction than on gas.
